How to store matcha
Keep matcha tightly sealed, away from heat, light, moisture, and strong odours. For a tin you will finish soon, a cool, dark cupboard is often simplest; for sealed medium- or long-term storage, refrigeration or freezing can slow quality loss, but let the unopened package return to room temperature before opening to prevent condensation.
Steps
- Choose a practical amount. Buy an amount you can use in a reasonably short time after opening. Smaller packages reduce repeated exposure to air, light, and humidity.
- Seal it immediately. Close the original tin or pouch firmly after every use. If transferring matcha, use a clean, dry, airtight, light-blocking container; never use wet tools.
- Store opened matcha cool and dark. Keep frequently used opened matcha in a cool, dry cupboard away from sunlight, steam, heat, and strong-smelling foods. Avoid repeatedly moving an opened tin between warm and cold storage.
- Use cold storage for sealed stock. For medium- or long-term storage, keep the unopened, well-sealed package in a refrigerator or freezer. Protect it from odours and moisture with a second airtight layer.
- Temper before opening. Remove refrigerated or frozen matcha and let the sealed package reach room temperature before opening. This prevents warm, humid air from condensing on cold powder.
- Use and inspect it. Sift before preparing. If the powder has absorbed moisture, smells dull, or has faded in colour, its best days are behind it. Matcha rewards being drunk, not kept.
Fridge or freezer?
There is no need to refrigerate a small opened tin that you use promptly if a cool, dark cupboard is available. Cold storage is most useful for sealed stock held longer, but condensation and odour absorption are real risks. Freezing is not a substitute for airtight packaging, and the package must remain sealed while it warms.
What degrades matcha?
Fine matcha has a large exposed surface area. Heat, oxygen, moisture, light, and odours can flatten aroma and change colour. The most avoidable mistake is opening cold matcha immediately after taking it from a fridge or freezer.
